Tomato and Cucumber Salad with Chickpeas and Fresh Herbs

Luscious red roma tomatoes, crisp green cucumber and the bright flavor or fresh herbs explode in this healthy, summer salad.  Simple and delicious, this salad is perfect for carry-ins, bbqs and picnics.

1 greenhouse style cucumber, sliced into bite-sized pieces
4 ripe roma tomatoes, cut into bite-sized pieces
1 can of chickpeas, rinsed well and drained
Fresh Herbs (I used dill and italian parsley), chopped fine
Pinch pink himalayan salt
Drizzle extra virgin olive oil

Toss all ingredients together.  Cover and refrigerate for 30 minutes to a day.  Holds up well for make-ahead side dish.  This dish has everything you need for a quick and easy lunch also.  Hope you enjoy!!
