In an endeavor to battle back from the chronic pain of fibromyalgia, I have changed my diet to exclude dairy and gluten. This formed a difficult situation at home as I have five children. Trying to work full time and cook two dinners every night was exhausting and expensive. So, I started to create GF/DF meals that my kids could share with me...and low and behold, they LIKED them!

Scramble the eggs with the milk until the yolks are well incorporated. Heat coconut oil in pan. Add eggs and fry until almost cooked through. Flip the egg to continue to cooking until solid throughout.
While frying the egg, cut the fruits in to bite sized pieces.
Put the egg on the plate, fill with fruit and fold over. Top with a drizzle of honey and more fruit.
